Ingredients

  • 28 ozdiced tomatoes with juice's
  • (if using fresh tomatoes add in one cup tomato juice)
  • 1small yellow onion diced or 1/2 large yellow onion
  • 1jalapeno seeded and diced
  • 1/4 cupfresh copped parsley
  • 4 tbspminced garlic
  • 2 tbspred wine vinegar
  • 1 tbspdry cilantro
  • 1 tbspchilli powder
  • 1 tbsppickling salt
  • 2 tspcrushed red pepper

Steps

  1. 1

    Mix all ingredients in a med sized pan.

  2. 2

    Heat over med heat. Bring to a summer stirring occasionally.

  3. 3

    Simmer for 15 minutes. Stirring occasionally. Remove from heat.

  4. 4

    Cool in fridge for at least one hour.

  5. 5

    Enjoy!!

  6. 6

    Side note* this recipe works well for canning salsa as well.
