Ingredients

About 1 hour
Serves 4 servings
  • 1 poundspaghetti
  • 8 tablespoonsextra virgin olive oil
  • 2large slices fresh salmon
  • 4-5green onions, finely chopped
  • 1 bunchfresh dill or fennel
  • 2/3 cupdry white wine (about 150 grams)
  • 3/4 cupfish or vegetable stock (about 200 grams)
  • 3/4 cupheavy cream (about 200 grams)
  • Salt, freshly ground white pepper
  • 1/2 teaspoonground ginger or 1 teaspoon freshly grated ginger
  • 2-3 clovesgarlic
  • Fresh dill, finely chopped (for garnishing the dish)
  • For a more complete flavor, mix the sauce you prepared with the hot pasta in the pot. In this case, you must serve immediately
  • Instead of spaghetti, we can use any other pasta we like

    Boil the pasta in salted water according to the package instructions, adding 2 tablespoons of the olive oil. Drain and keep warm.

    Cut the salmon into pieces. Heat the remaining olive oil in a pan and sauté the salmon, green onions, and dill. Deglaze with the wine. Once it evaporates, add the fish or vegetable stock.

  3. 3

    Boil the sauce for 10 minutes, then add the heavy cream. Add a little salt, pepper, ginger, and fresh garlic pressed through a garlic press. Simmer the sauce on low heat for another 3-4 minutes until it thickens.

    Serve the spaghetti with the salmon sauce we prepared. Sprinkle with the chopped dill, freshly ground pepper, and serve immediately.
