Steps

In a pan heat 1 tbsp oil on a low flame, add cumin seeds, coriander seeds, Asafoetida and ginger garlic paste. Mix and cook until the raw smell from ginger garlic goes away. (Takes 1 min).

Next add red chilli powder, garam masala and dry mango powder. Mix well and add mashed potatoes along with salt and coriander leaves. Give a good mix.Turn the flame off.

Once the above mixture cools down to the room temperature, Make small balls and pat them flat on your palm. Keep it aside.(it makes approx 6 wadas out of 3-4 potatoes).

In another bowl take gram flour, add salt to taste, turmeric powder and baking soda. Mix everything and add water to make little thick flowing consistency. Keep it aside.

Heat oil in a pan for frying on a medium flame. Once the oil is hot. Take one vada at a time (made in step 3) dip in the batter (made in step 4).

Slowly leave the dipped vada in the hot oil. Fry them from both sides till light golden brown by flipping them in between.

Remove it on a tissue paper or paper towel.

Follow the process for the remaining wadas.

Serve hot with or without Pav/Bread along with chutney and fried green chilli.
