Ingredients

Serves 4 servings
  • 8 slicesmultigrain sandwich bread
  • 1 cupalmond milk (about 240 ml)
  • 1egg
  • 2 packetsvanilla sugar
  • 1heaping tablespoon date paste
  • 3 tablespoonscane sugar
  • 2 tablespoonssliced almonds
  • 3large fresh figs
  • 3.5 ozthawed raspberries (about 100 grams)

    Preheat the oven to 400°F (200°C). In a mixing bowl, whisk the egg with the date paste, almond milk, and vanilla sugar. Soak the bread slices in this mixture.

  2. 2

    Arrange the soaked bread slices in a lightly buttered baking dish. Pour the remaining milk mixture over the top. Sprinkle with fig wedges, thawed raspberries, sliced almonds, and cane sugar.

    Bake for 20 minutes. Let cool slightly before serving. You can also enjoy it cold. I had mine warm with a scoop of vanilla ice cream on top—delicious!
