Egusi pepper soup

This is a simple and special soup. It is common in Sapele, Delta State. My beautiful Aunty Larai in Sapele thought me how to prepare this soup. I've not been to Sapele for about 2 years now and as I miss the fam there, this soup came to mind.

Steps

Wash your fish. Blend Scotch bonnet, Cayenne pepper, onions and ginger together. Fry your Egusi in a dry pot and blend dry. Set them aside

In a clean pot, put your washed fish. Pour in your blended pepper, egusi, pepper soup spices mix, 3 cubes of seasoning, little salt and pour water well above the fish level and place on fire to boil for 15mins. As it boils, it gets a bit thicker.

Wash your scent leaves and pour into the boiling soup. Allow it to boil for another 5-10mins. You can serve with pounded yam, starch, eba or any swallow of your choice. I served mine with semo. Bon appetitè
