This recipe is from my mom. I make it often because my son loves it. It's delicious and filling.

Finely chop the garlic, onion, and one tomato.

In a skillet, heat oil over medium heat. Sauté the garlic and onion, then add the chopped tomato. Cook for 5 minutes.

Add the ground beef. Season with a mix of salt, black pepper, garlic powder, and paprika. I use equal parts of each (2 teaspoons each) and keep the mix in a jar—it gives dishes a delicious flavor.

Slice the lettuce and the remaining tomato, removing the seeds from the tomato.

Fry the tortillas in hot oil. Fill each tortilla with the beef, lettuce, tomato, sour cream, and grated Cotija cheese. Serve with your favorite salsa. (I made a raw green salsa; I'll share that recipe separately.) Enjoy!
