When we think chutney the first thing that comes to mind is spicy dips. In Mauritius we serve chutney, in Mauritius we call it "satini" as an accompaniment to many dishes. They form a very important part of the meal. A little bit like a flagstone to most of our meals, the little extra treat.
Did you know that the word chutney comes from the word "chaat" meaning lipsmacking in Hindi. This word derived because whenever people taste a chutney they usually do the lipsmacking gesture. Hence "chaatni" is chutney and in Mauritius its referred to as "satini" in créole.

Ingredients

4 - 6 servings
  • Coriander Chutney ingrédients :
  • Brunch of fresh coriander
  • Green chillies 1-2 depending on personal taste
  • 1fresh tomato
  • Juice of half lemon
  • to tasteSalt
  • Brinda's tip: strongly advise to add salt just before serving
  • Ingredients for Peanut chutney:
  • 1/2 cupdry roasted peanuts
  • Small bunch of fresh coriander
  • leavesFew mint
  • 1 Tbstamarind paste
  • to tasteSalt
  • 1medium size tomato
  • Fresh chillies to personal taste
  • Ingredients for Coconut Chutney:
  • 1/2 cupdesiccated coconut or freshly grated coconut
  • Rest of ingredients as above for peanut chutney
  • Little water to get a smooth finish

Steps

  1. 1

    The method applies the same for all the above - see below

  2. 2

    Wash and place all the ingredients in a blender.

  3. 3

    Put all ingredients in a blender, blend to a smooth paste.

  4. 4

    Adjust smoothness by adding little water.

  5. 5

    Season to taste.

    Add chillies to suit personal taste.

  7. 7

    These chutney will keep for 1 week in the fridge. Keep refrigerated.

  8. 8

    Enjoy as a dip or a great side accompaniment.
