Rinse the bones thoroughly with water. Blanch them in boiling water, then remove and rinse again. Place the bones in a pot, cover with water, and simmer for 2-3 hours to make a flavorful broth. Skim off any foam to keep the broth clear.

Char the onion, ginger, and star anise until fragrant. Smash the ginger, cut half the onion into thick slices, and add everything to the simmering broth for extra aroma. Use 1-2 star anise depending on the amount you’re making—too much can make the broth overpowering.

Slice the remaining half onion and sauté it with the beef. Cook the beef until just tender and flavorful. If you prefer, you can boil the beef, then soak it in a bowl of cold water to make it more crisp.

After simmering the bones, season the broth to taste. Briefly dip the pho noodles in boiling water to soften and remove any sour taste, then place them in bowls. Add the beef and pour the hot broth over. Enjoy your meal!
