I adapted a very popular recipe from our nursery school.

The ingredient list may seem rather complicated, but this recipe is easy enough to make in large batches!
The important point is to put miso in both the meat mixture and the sauce!

Ingredients

2 servings
  1. 400 gramsTofu
  2. 200 gramsGround pork or ground chicken
  3. 10Shiso leaves
  4. for the meat-miso mix:
  5. 1 tspMiso
  6. 2 tspMirin
  7. 1 tspSake
  8. 1 pinchof each Salt and pepper
  9. for the sauce:
  10. 1 tbspMayonnaise
  11. 1 tbspMiso
  12. 2 tspSake
  13. 1 tspSugar

Steps

  1. 1

    Prepping: Drain the excess water from the tofu. Mix together the sauce ingredients - mayonnaise, miso, sake and sugar. Finely shop the shiso leaves.

  2. 2

    The meat-miso mix: Brown the ground meat and flavor with the meat-miso mix ingredients - miso, mirin, sake, salt and pepper. Turn the heat off, and add the chopped shiso leaves.

  3. 3

    Cut the tofu into pieces, and put into a gratin dish. Put in the meat-miso mix, then the sauce, and bake in the oven until browned on top.

    Finished! The photo shows a single serving baked in a dish.

    Variations: Add whatever ingredients you like! Mushrooms, eggplants, green onions and cheese are popular.
