Ingredients

  • 1octopus (600 - 800grms)
  • 2 tbspolive oil
  • 3onions,chopped
  • 8black olives
  • 2 tablespoonstomato paste (kunserva)
  • 1carrot grated
  • 1 tablespoonchopped fresh mint
  • 2 tablespoonchopped fresh parsley
  • 250 mlred wine
  • Salt and pepper

Steps

  1. 1

    Cut octopus in bite-size pieces (tell fishmonger to clean)

  2. 2

    Slightly cook onion and garlic in oli

  3. 3

    Add octopus and other ingredients

  4. 4

    Cook for about an hour or until octopus is tender

  5. 5

    Note: this may be served hot over spaghetti or it may be cooked as a main course by adding 500g of peeled and quartered potatoes at the beginning of the cooking time.
