Churma gur Ladoo / churma laddu with Jaggery

I can't imagine Lohri and Sankranti without Churma. I remember my dad making churma with parathas, gur and ghee. A very simple and rustic dish with lots of love. So churma is something which is very close to my heart. SO this year I tried this typical churma recipe. I have sweetened it with gur instead of sugar so this makes it a very healthy and nutritious recipe. Addition of lots of ghee and nuts makes it rich as well.

Add 1/2 cup of ghee to 2 cups of whole wheat atta. Mix well till it resembles bread crumbs and binds well.

Using little warm milk, knead a firm dough. Keep kneading for 4-5 minutes once everything has come together.

Preheat ghee in a karahi and once it heats up lower the gas to minimum and wait for a while. Pinch out small portions of the dough and flatten them to make small puris. They shouldn't be too thick.

Deep fry the puris on very low heat till they are cooked through. This is going to take a lot of time so be patient and do not increase the flame. Once they turn dark golden they should be done.

Once the puris cool down totally, break them into small pieces. Now grind them to a coarse powder in a grinder. Keep aside.

Slightly roast the nuts, this is very optional. you can just add the nuts without chopping.

Heat 1 tbsp of ghee and add the besan and suji. Roast them on low flame till aromatic and golden.

Add the roasted besan and suji to the powdered laddu mix. Also add the cardamom powder. Mix well.

Also add the chopped nuts.

Heat 1/2 cup ghee in a kadai, add 2 cups of gur. Melt it completely. Add the melted gur and ghee to the laddu mix.

Mix it all well. And once it cools a little make small laddus. Cool it completely before eating.

Yummy and healthy churma gud laddus are ready.
