I haven’t had much time to cook since the schools closed so salads and smoothies are an easy fallback position for me at the moment. I despise limp lettuce affairs so for me salads need to be chunky, filling and full of flavour.

Take your avocado half and use a sharp knife to score through to the skin in a grid - don’t cut through the skin.

I love Balsamic vinegar. I have it in a bottle with Apple and another with Strawberry. At the minute I have a passion for dried red peppers has a lovely taste to the food love it.
