Beef Birria
This is a birria recipe that's great for a hangover.

Wash the meat well and place it in a pot with enough water, garlic, and onion. When foam rises to the top, skim it off. Cook for 1 hour, then remove the garlic and onion.

Remove the seeds and veins from the chiles, except for the arbol chiles, and set aside.

In a skillet with enough oil, sauté the onion over low heat, then fry the chiles in batches so they don't burn and turn bitter.

Set the chiles aside, then boil them in clean water until soft. Fry the garlic and set it aside with the onion in the blender jar.

Once the chiles are soft, add them to the blender with a little of the chile cooking water, all the spices, and the vinegar.

Strain the blended sauce and add it to the meat. Let it simmer for 2 more hours. Add salt to taste and the bouillon cube, and adjust seasoning. When the flavor is right, turn off the heat.

The meat should change color and become tender. Remove it and chop it up a bit. Serve with onion, cilantro, and lime juice to enjoy with your special person.
