Shahi Patta Gobhi Dum Aloo

Wash Patta Gobhi properly, then chop it in slices like strips.

Now wash sliced Patta Gobhi properly.

Chop Aloo in medium-small size pieces.

Chop Onions, Green Chillies, Ginger & Dhaniya Leaves very finely.

Grind Tomatoes finely into purée in a mixer grinder.

Soak Kaju pieces in boiling water for 5-10 minutes & then grind them finely into paste.

Now take a kadhai, add 1 Big Spoon Mustard Oil in it & keep the gas on high flame to burn the oil first.

When smoke starts coming out of Kadhai, turn off the flame & let the oil cool down a bit.

After some time, again turn on the gas & keep the gas on medium flame.

Then add sliced Patta Gobhi in it & cook them for 5-7 minutes.

Meanwhile on the other hand, take another kadhai or pan, add 1 Big Spoon Mustard Oil in it & keep the gas on high flame.

When smoke starts coming out of pan or Kadhai, turn off the flame & let them cool down a bit.

After some time, again turn on the gas & keep it on medium-low flame.

Now add 1 Teaspoon Jeera, 1/2 Teaspoon Ajwain, 1Tea Spoon Jeera & 1 Pinch Hing in it & let them sizzle.

When they start sizzling, add finely chopped Onions, Green Chillies & Ginger in it & roast them till they turn into golden brown in colour.

After 3-4 minutes, when they turn into golden brown in colour, add 1/2 Teaspoon Haldi Powder in it & roast it for 1 Minute.

After 1 minute, add finely grinded Kaju paste in it & roast them for 1-2 minutes.

After 1-2 minutes, add finely grinded tomato purée in it with 1 Teaspoon Salt so that they start releasing oil quickly.

After 5-6 minutes, when oil is completely released, add 1/2 Teaspoon Laal Mirch Powder, 2 Teaspoon Dhaniya Powder in it & roast them for 2-3 minutes.

Now after 5-7 minutes, when Patta Gobhi is turned golden brown in colour & crispy, turn off the flame & transfer them in Masala mixture pan & mix them properly.

Then add chopped aloo pieces in it & mix them properly,

Now cook them for 5-10 minutes on low flame.

After 5-10 minutes, add some water, finely chopped dhaniya leaves & 1/2 Teaspoon Garam Masala in it & mix them properly.

Your Shahi Patta Gobhi/ Cabbage Dum Aloo is ready to be served.
