Spicy Egg Pulao

Heat a pan, add 2 tbsp of oil. Once the oil gets hot, shallow fry the eggs, potato pieces & cauliflower pieces by adding little salt & turmeric powder. Keep them aside.

Then add all the khada masalas to it as stated above. Let them splutter a bit. Then add chopped onion & green chillies to it. Fry it for about a minute, then add ginger-garlic paste. Give it a mix. Fry it for about a minute. Then add chopped tomatoes to it. Give everything a good mix. Fry the masala on a low flame.

Then add dry masalas like cumin powder, coriander powder, garam masala powder, turmeric powder, salt and sugar to it. Now mix it well. Fry the masalas for 3 to 4 mins. Then add chopped capsicum to it. Now fry everything well with the masalas unless oil starts releasing from the masalas.

Once the masala is done, add fried cauliflower, eggs & potato pieces to it. Coat everything well with the masalas. Switch off the flame, remove all the khada masalas and keep it aside.

Now take a pressure cooker add 2 tbsp of ghee to it. Once it gets hot fry the cashew pieces & keep it aside. Then to that add, shahi jeera, 1 green cardamom, 1 cinnamon stick, 1 black cardomom & a bay leaf. After few seconds, add rice to it & fry it for 2 to 3 mins. The rice will turn pure white from crystal colour. This means that your rice is fried well. Now add water to it.

Add few drops of rose essence, salt as per your taste & sugar. Mix everything well. Then add the fried masalas along with eggs, potatoes & fried cauliflower pieces. Add fried cashews to it. Add some chopped coriander to it. Now give everything a good mix.

Cover the pressure cooker & wait for two whistles on high flame. Then lower the flame & wait for 5 more mins. Then switch off the flame. Wait for the air to get released from the cooker. Then serve hot with raita of your choice.
