  1. The Chinese noodle ingredients:
  2. 2servings Pasta (very thin type)
  3. 1 tbspBaking soda
  4. 1 dashSalt
  5. The sauce:
  6. 3 tbspMentsuyu
  7. 2 tbspVinegar
  8. 1 dashRa-yu
  9. 1 dashSesame seeds

Steps

  1. 1

    Add the baking soda and salt to boiling water, and put in the pasta.

  2. 2

    After a while, the water will smell like egg noodles.

  3. 3

    Boil the pasta for the time specified on the packet. If you are going to be using the noodles for yakisoba (pan fried noodles) later, cook the pasta so that they are a bit firm.

  4. 4

    Drain the cooked pasta, cool it down in cold running water to tighten it up, and it's done. You can serve it with the sauce as tsuke-men (noodles dipped in sauce).
