Ingredients

24 cupcakes
  1. 1 cuppancake mix
  2. 1 cupall-purpose flour
  3. 1 cupsugar
  4. 1 cupoil
  5. 1/2 cupmilk
  6. 1 tablespoonbaking powder
  7. 2 tablespoonsvanilla extract
  8. 1 tablespoonground cinnamon
  9. 3eggs
  10. 2 tablespoonsoats
  11. 2grated carrots
  12. 1apple, diced
  13. 2 slicesfresh pineapple
  14. to taste walnuts, almonds, shredded coconut, amaranth, sesame seeds (optional)
  15. to taste sunflower seeds, pumpkin seeds, cranberries (optional)

Cooking Instructions

    Grate the carrot and mix with the pineapple, apple, oats, and seeds. (set aside)

    Sift the flours, cinnamon, and baking powder, set aside.

    In another bowl, beat the eggs with sugar and vanilla until slightly fluffy, then add the cup of oil and milk.

    Gradually add the flours and use a spoon to mix in the grated carrot and other ingredients.

    Place in cupcake liners and bake at 480°F for 20 minutes or until fluffy and not golden brown.
