Mix together the 1/2 cup ketchup, brown sugar and dijon mustard for the topping. Set aside.

Saute diced onion and bell pepper in olive until softened. 5-7 minutes, adding minced garlic towards the end. Remove frome heat and let cool. Salt and Pepper to taste.

Mix together the eggs, 1/4 cup ketchup, seasoning mix, worcestershire sauce, mustard, sautéed onion mixture and crushed crackers until well combined. Fold in ground beef and shredded cheese until well combined.

Please mixture in a bread loaf pan. Brush top of meatloaf with the topping.

Bake uncovered at 350 degrees for 35 minutes, or until internal temperature reads 165 degrees. Don't overcook! Let cool 15 minutes. Slice and enjoy.
