Ingredients

  1. 32 oz.Mixed Summer Squash, thinly sliced into rounds
  2. 8 oz.Mixed radishes, thinly sliced into rounds
  3. 8 oz.Line caught tuna in olive oil
  4. 2ea. Shallots, thinly sliced
  5. 8 oz.Sun gold tomatoes
  6. 1ea. Serrano chile, thinly sliced
  7. 2 cupsPurple Cauliflower, thinly sliced
  8. 8ea. Limes, juiced
  9. 1 1/2 cupsExtra Virgin Olive Oil from Spain
  10. 1/2 cupsDill and Cilantro, chopped
  11. 2 oz.Aged Manchego, shaved
  12. Coarse sea salt to taste
  13. Fresh ground pepper to taste

Cooking Instructions

    In a large bowl, toss the squash, radishes, tuna, shallots, tomatoes, chile, cauliflower, Extra Virgin Olive Oil from Spain and lime juice. Season with salt and pepper.

    Divide onto a large platter and top with fresh herbs. Zest the rinds of the lime directly on top and then use a vegetable peeler to shave the Manchego. Serve immediately.
