6 tortilla bowls
  • 6flour tortillas. See my recipes for instructions
    TORTILLAS DE HARINA PARA TACOS. JON STYLE
  • 3 cupsshredded lettuce (about 180 grams)
  • White bean salad
  • Ingredients for the salad
  • 3 cupscooked white beans (about 500 grams)
  • 1/4 cupdiced red bell pepper (about 35 grams)
  • 1/4 cupdiced green bell pepper (about 35 grams)
  • 1/4 cupdiced yellow bell pepper (about 35 grams)
  • 1 cupsmall broccoli florets (about 90 grams)
  • 1/2 cupdiced goat cheese (about 75 grams)
  • Dressing
  • 1 1/2 tablespoonsolive oil (about 22 ml)
  • 1 tablespoonrosé wine vinegar (about 15 ml)
  • 1/2 teaspoonsalt (about 3 grams)
  • 2 tablespoonschopped cilantro (about 8 grams)

Steps

  1. 1

    Heat a pot with plenty of oil. Press the center of a tortilla into the oil using a strainer smaller than the tortilla so the edges rise up, forming a hat or basket shape. Fry the tortilla bowls until golden brown.

    Blanch the vegetables by placing them in boiling water for a few seconds, then cool them in cold water.

    In a salad bowl, whisk together the dressing ingredients. Add the vegetables, white beans, and blanched vegetables, mix well, and refrigerate until ready to serve.
