Ingredients

  • 500 gramsuncut rice noodle sheets (about 1.1 lbs)
  • 1cucumber
  • 1 headromaine lettuce
  • 100 gramsgreen beans (about 3.5 oz)
  • 1/2carrot
  • 2 clovesgarlic
  • 1chili pepper
  • 1 tablespoonsugar (about 12 grams)
  • 2 tablespoonsfish sauce (about 30 ml)
  • 2/3 cupboiling water (150 ml)
  • Juice of 1 lime
  • 400 gramsboiled pork (about 14 oz)

Steps

    Remove the skin from the boiled pork, slice it, then chop it finely. Heat some cooking oil in a pan, add the pork, and stir-fry. Season with a little MSG and a splash of fish sauce to taste. Stir until the pork absorbs the seasoning, then turn off the heat. Don’t cook too long or the meat will dry out.

    Peel and wash the carrot, then shred it. Cut off the ends of the cucumber, rub to remove any bitterness, wash, and slice into thin sticks. Pick and wash the cilantro and lettuce, then drain. Trim the ends off the green beans, slice them diagonally, then blanch briefly in boiling water until just tender. Remove and let cool.

    Mix fish sauce, MSG, and sugar with boiling water, stirring until the sugar dissolves. Add lime juice and adjust to your preferred level of sourness. Add finely chopped garlic and chili, stirring gently so the garlic and chili float on top for a nice appearance.

    Arrange the rice noodle sheets, cucumber, carrot, cilantro, lettuce, green beans, and chopped pork on a platter. Serve and enjoy!
