Walnut and Cinnamon rolls

Very easy and fool proof recipe, if you don’t like walnuts, just cut them out.. This is a small batch recipe but you can double it up straight away.
Add the whole egg for the double batch..
You can have them in the breakfasts, kids lunches or with coffee or tea! Or simply eat 2-3 straight out of the oven! 😋😋
I always like to make doughnuts or such thing mini size, as they are more interesting for kids and toddlers plus they don’t get wasted..You can make any size..
For rising quickly, I kept the dough in-front of the window where direct sunlight comes.. So the process was quite quick.

Steps
- 1
In a bowl add yeast, sugar and lukewarm milk, cover and allow to form bubbles. It takes 10-15 mins.
- 2
In a medium bowl add egg yolk, sugar, salt, butter and yeast mixture. Mix well.
- 3
In a big mixing bowl add flour and pour this mixture in it. Mix with a spatula or spoon till everything is incorporated.
- 4
Now drop the mixture onto a floured work surface and knead until the dough is no longer sticky and forms a ball. Knead for about 10 mins, pressing and stretching with the end of your palm.
- 5
Make a ball, grease the bowl and dough with butter and let it rise into double.
- 6
Now roll out the dough into as thin and big as you can. Then mix together the sugar, butter and cinnamon powder. Lay it on the dough and top with lots of crushed walnuts. I put some extra butter on sides as well.
- 7
Now roll it tightly, cut it into desired size balls and place in greased pan.
- 8
Let it rise again, till doubled and fluffed. It may take 30- 50 mins, depending on the warmness of the place.Pre heat your oven at this time.
- 9
Now place them in your pre heated oven at 180 degrees for 20 mins. (For bigger rolls, bake for 25-30 mins) You can check after 20 mins, they turn nice brown from top.
- 10
While baking the rolls, mix the frosting nicely and keep aside. I used brown and white sugar mixed, so the color appears plae. When baked, give 5 mins rest, then drizzle the frosting and enjoy 😋
