Made with homemade yogart( recipe posted separately (can use bought thick yogart)),fermented blueberries, few summer berries and plums( from pulp), (this was just to try, orange juice may be a trual alternative or you can make a culi type)can be used,the dried fruit(can add in or exchange with dried figs ,and dates to make it even better ),Now here we added in a hint if spice and the main flavors are from fermented berries and plums and the dried fruits.the over night proofing helps make this super soft and almost sharing style bread I hope spongy even fluffy.the idea is to fold many times to giv the lovely layering and lock in the spingynes inshaAllah ...Alhamdulillah.hoping it is all we hope in a nutshell to call it...a fruit bread loaf!#kitchenbingo,#ramadhan preps

Ingredients

  • 2/3mug sieved strong brown bread flour
  • 1and 1/2 plain white flour
  • 1/2atta flour
  • Halfa mug homemade (or shop bought)thick yogart
  • 1tspn cinnamon powder
  • 1tspn ginger powder
  • 3whole cloves
  • 1tspn fennel seeds(optional or can decor at top only)
  • 1tspn salt
  • 4 tablespoonbrown sugar
  • Handfuldried cranberries(rinced before)
  • Handfulraisins(rinced before)
  • 2 handfulsdried cubes appricots(rinced before)
  • Quater cup of fermented fruits pulp juice(can use fresh instead)
  • Quater cup warm hot water and half pack dry yeast
  • 3heaped tablespoon heaped butter
  • 3-4 tablespoonscooking oil
  • Large handful Pine nuts for later garnishing

Steps

    Lots of components here,so can do preps bit by bit.eg some of the tjings you can do in advance and place in frudge:the juice,the yogart are in advance if you making homemade,the chopping if dried fruits and the proofing yeast(use sugar too) is the first steps to start. 1.add in the yeast and some warm water wait a while to bubble then add the semi melted butter the juice pulp the (can melt these together so everything is room temp!,add all you need and just leave the seeds for garnish later

    So add in the ingredients as shown in pics:spices(salt etc,fruits,butter,oil,and juice pulp(see pic as made from plum and berries and cinnamon and sugar)

    Now add flours and knead dough.at this point it is sticky and so after bit more mix/knead to come together add a table spoon of oil to help the sticking..it will be slighlty sticky but not too much.cover with cling film and leave over night in cool fridge.then you can punch out air/gas may hav produced due to fermentation it will reduce alot by doing this and briefly re mix/ Knead then leave again..
    now when ready to bake let out if fridge and divide mixture in half and bake 2 medium small loafs

    This is how it looks when over night proof lots of hollows and stringynes..amazing Alhamdulillah.so if using no tins you can stretch out the Doug in rough circle or truang lush shape and fold over the dough on itself several times then you can seal all fold ends gently then place in baking try.use butter to place parchment paper securely.also use two tray or can freeze in freezer in a bag or tight containerone batch for an other baking times

    Nowif hav a deeper tin or baking container it eill be much better and cook thru nicely gav a good depth and fluffier outcome.but if you shape it well it shudnt be too thick at centre as it won't cook and if doesn't hav rising support it will not a cook to hav a spongy and soft instead it will be doughy and heavy.do you can see some useful methods in pic e.g. in cookpad to help demonstrate this

    Now don't forget to slit using a butter knife or other,at top of dough and make another design lice side ways lines deep enof and the arrange your pine nuts all along the slits slightly secure them by pressing gently..
    Please slice once cooled and you can store in tight container for few or so days InshaAllah.. enjoy baking.and enjoy your efforts and patiencies Bismillah!!
