I always make this whenever I buy delicious carrots. I revised a version of paste for potage with onions that I used to make.

I always make this whenever I buy delicious carrots. I revised a version of paste for potage with onions that I used to make.

Peel the carrots and roughly chop them. ※ If you are using organic vegetables, clean off the dirt and use them without peeling.

Heat butter in a heavy pan. Lightly sauté the carrots and coat with butter.

Add enough water to cover the carrots. Add salt and simmer over very low heat for 1-2 hours. The sweetness of the carrots is brought out by cooking slowly over low heat.

Once the carrots have cooled, put them into a blender and pulse until smooth.
