Pour flour onto clean surface, making well in center. Pour eggs into well with oil & salt.

Mix with hands until well combined. Use pastry scraper to incorporate until moist but not sticky.

Knead for approximately 15 minutes by stretching & pushing away from you, using heel of your hand. If dough becomes too dry, add more olive oil. If too wet, add flour.

Cover in bowl with plastic wrap for 1 hour.

Cut prepared pasta dough into 4 pieces. Flatten into rough rectangle shapes. Put through pasta machine. Roll through machine. Fold pieces into thirds & roll through machine again reducing width setting. Repeat 3-4 times.
