Oats Paneer and Corn Galette

A Galette is a French pastry similar to a tart or a pie. It's essentially a pastry dough wrapped over a filling which can be either sweet or savoury.
The galette crust is generally made using all-purpose flour but here I have replaced it with a healthy combination of Oats flour and Whole wheat flour. For the filling of the galette, I have used caramelised onions, tomatoes, capsicum, corn and cottage cheese. This healthy and guiltfree French pastry is a must try and can be made easily without having to spend much time in the kitchen. They can be served as a lovely center piece on your dinner tables

Steps
- 1
To make the crust, grind Quaker Oats in a mixer jar. Transfer the oats flour to a bowl, add whole wheat flour, salt and pepper. Add butter and continue to mix until it resembles fine sand. Add quaker oats homestyle masala, add milk gradually and continue to knead until you have a smooth dough. Apply some oil, wrap in cling film, and refrigerate.
- 2
To make the filling, pour oil in a pan. Fry the chopped garlic for a few seconds. Add onions and cook until they are caramelised and soft. Add soya sauce and salt. Cook for another minute. Add half of the capsicums and then add paneer. Add red chilli powder and quaker oats tangy tomato masala. The filling is ready.
- 3
Dust some whole wheat flour on a surface and divide the dough into 2 equal parts. Roll out the dough into a circle about a 1/4 inch thick. Sprinkle half the filling over the base of the dough, leaving a 1/2 inch border around the edges. Top with the remaining capsicum slices, tomato slices and corn kernels. Sprinkle remaining paneer on top and season with pepper. Gently fold the edges over the filling but keep the centre exposed.
- 4
Take a pastry brush and lightly brush the pastry with some melted butter. Preheat the oven for 10 minutes. Bake the galette at 180° Celsius until the filling is bubbly and the crust is golden brown, for about 15-20 minutes. Slice the galette into 4 equal portions and serve hot.
