Wash mango ginger, remove skin, cut into pieces

Dry roast dry chilli, cumin, mustard seed. If you want more spicy you add 3 more chilli

Grinds fine powder and keep. crush garlic and grind with ginger as coarsely, (not fine paste) add salt and tamarind paste mix and keep

Keep a pan, add oil, add ground ginger and ground powder, stir often in medium flame for 10min
- 5
Cover halfway and continue to cook in low flame. Stir often, until oil separates and the thokku leaves the pan freely

Once cool completely, store it in a jar, you can keep at room temperature for a month. Use clean spoon always

Mango ginger thoukku is ready to use with rice, oddly, dosa chappathi etc., it is very good for digestion.

Add gingely oil when you eat with iddly and dosa. It will be very tasty
