Macrobiotic Muesli Cookies

I came up with these cookies because I figured I should try to make the snacks I eat at home healthy.
Use muesli with dried fruit, and organic if possible.

If you don't have corn starch, you can use katakuriko instead.

If you flatten the cookie dough on the baking tray, it'll help them cook through evenly and will turn out crunchy. If you prefer cookies that are soft and moist inside, leave the dough in lumps. Recipe by Lotta Labo

Ingredients

6 servings
  1. 80 gramsCake flour
  2. 30 gramsKatakuriko
  3. 30 gramsCorn starch
  4. 60 gramsMuesli
  5. 6 tbspMaple syrup
  6. 5 tbspCanola oil

Cooking Instructions

    Preheat the oven to 180℃.

    Put all the ingredients in a bowl, and mix well with a rubber spatula or something similar.

  3. 3

    Line a baking tray with parchment paper. Scoop up the dough with a spoon, and lay them on the baking tray. The dough is quite stiff, so use two spoons.

    Bake in the preheated oven for 20 minutes and they're done.
