Macrobiotic Chocolate-Like Carob Cake

This macrobiotic cake doesn't contain eggs, sugar, dairy products, or cocoa powder.

I don't have any hints, but make sure not to over-mix the batter in Step 2.
Toss dried fruits into the batter instead of nuts. Or add canned fruits, such as pears or dark cherries for a really soft, moist cake. Feel free to experiment with this recipe. Recipe by Mille=miru

Ingredients

6 servings
  1. 150 gramsWhole wheat flour (or all purpose flour)
  2. 100 gramsCarob powder
  3. 1 1/2 tspBaking powder
  4. 180 mlSoy milk
  5. 5 tbspMaple syrup
  6. 2 tbspVegetable oil
  7. 1Chopped nuts, or any topping you like

Cooking Instructions

    Put the dry ingredients in a bowl and mix with a whisk. If you're nit-picky about lumps, sift the ingredients before mixing.

    Add all rest of the ingredients to the bowl, and mix – do not knead – together until the batter is evenly incorporated.

  3. 3

    Pour the batter into the cake pan, and sprinkle with nuts or any other topping of your choice. Bake in a preheated oven at 180°C for about 30 minutes.
