Ingredients

15 servings
  1. 2Chicken thighs
  2. 1 stalkJapanese leek
  3. 1 cloveGarlic (grated)
  4. 50 mlSake
  5. 4 tbspof each Sugar and water
  6. 150 mlHot water
  7. 5 tbsp▽ Sake
  8. 5 tbspSoy sauce
  9. 3 tbspMirin
  10. 2to 3 drops ▽ Sesame oil

Cooking Instructions

  1. 1

Cut the chicken into bite-sized pieces. Peel the skin off and cut into bite-sized pieces as well.

  2. 2

Put the chicken, garlic and sake into a plastic bag and massage well over the bag to let the flavors meld for about 30 minutes.

  3. 3

Skewer the meat to make yakitori sticks. I've also skewered the leek and skin as well.

  4. 4

Microwave the skewers for about 3 minutes, then brown in a frying pan, and coat in the sauce to finish.

  5. 5

For the sauce: Combine the sugar and water in a pan and heat until it forms a caramel syrup.

  6. 6

Remove from heat and pour in the hot water. It will boil, so gently pour in the water.

  7. 7

Add the ingredients marked ▽ to the pan and bring to a boil. Don't cook the sauce down too much.

  8. 8

Put the microwaved chicken skewers in a frying pan with the sauce over medium heat. When the chicken is coated with the sauce, it's done. Adjust the amount of sauce to your liking.

  9. 9

Sprinkle with shichimi spice to taste, and enjoy!
