Use firm fish fillets, this recipe gives a beautifully tender result

Add all the ingredients (except the fish) to a saucepan, slowly bring the mixture to medium to low heat until the butter has melted

Add the fish to the poaching liquid, and allow to cook for 10-15 min until fish is cooked through

The fish will be very tender, serve with mashed potato or on toast. Enjoy.
