Sprinkle a pinch of salt on the onion, mix well, and let sit for 2-3 minutes. Rinse to remove the salt and pat dry with paper towels to remove excess water.

Sprinkle a pinch of salt on the Japanese cucumber, mix well, and let sit for 2-3 minutes. Rinse to remove the salt and pat dry with paper towels, gently squeezing to remove excess water.

Cut the potatoes into pieces and rinse until the water runs clear.

Place the cleaned potatoes in a pot, cover with water, add a pinch of salt, and boil until cooked, about 12 minutes.

While the potatoes are boiling, place the cut carrots in a pot, cover with water, and boil until soft, about 3 minutes. Drain and set aside.

Once the potatoes are cooked, drain completely and place them in a mixing bowl. Mash with a fork while still hot, then add a pinch of salt and pepper.

Add the carrots, onion, Japanese cucumber, boiled egg, corn, and mayonnaise. Mix well (you can add more mayonnaise if desired).
