Ingredients

6 servings
  1. 3 poundsred garnet sweet potatoes or yams
  2. 2 tablespoonsmaple flavored syrup
  3. 4 tablespoonsbutter or margarine, softened - divided
  4. 1/2 teaspoonsalt
  5. Ground cinnamon or nutmeg
  6. 1/3 cupchopped pecans
  7. 1-2 teaspoonslight brown sugar, packed
  8. Additional maple flavored syrup, if desired

Steps

  1. 1

    Heat oven to 350 degrees F.

  2. 2

    Pierce sweet potatoes with fork.

  3. 3

    Place potatoes in square pan, 9x9x2 inches.

  4. 4

    Cover and bake about 1 hour 15 minutes or until potatoes can be easily pierced with a knife.

  5. 5

    Slip off skins

  6. 6

    Beat potatoes with electric mixer on medium speed until no lumps remain.

  7. 7

    Add 2 tablespoons syrup, 2 tablespoons butter, salt and desired amount of cinnamon.

  8. 8

    Continue beating until potatoes are light and fluffy

  9. 9

    Melt 2 tablespoons butter in a skillet over medium heat until just beginning to brown. 3 - 5 minutes.

  10. 10

    Stir in pecans; cook until lightly toasted, 1 - 2 minutes then removed from heat.

  11. 11

    Stir in the brown sugar.

  12. 12

    Pour over the sweet potatoes.

  13. 13

    Drizzle with additional syrup if desired.
