Gaajar Halwa is an exclusive Indian Dessert loved by people of all ages. Also it is enjoyed in a variety of different festivals and parties. Best part being that it hardly takes your time. You can do multiple things while tending to this dessert. This is a slow cook method done on a gas without Pressure Cooker. It's creamy and lusciuos. And is served with Vanilla Ice-cream for that extra punch. It can be served with any of your favourites apart from Ice-cream. It's entirely upto you. I have used Amul Fresh Cream in this. It gives this a lovely texture and has that melt in mouth super duper taste.

Ingredients

40-45 minutes
5-6 servings
  1. 1 kgCarrots shredded
  2. 1 1/4 cupsSugar
  3. 1/2 tspCardamom powder
  4. 1/2 cupGhee
  5. 1 litreMilk
  6. 1 cupAmul Fresh Cream
  7. 1/2 cupMixed Nuts slivered
  8. 1/2 cupKhoya or Mawa
  9. as requiredIce-cream

Cooking Instructions

40-45 minutes

    Wash and grate your Carrots and set aside. Put the grated carrots in preferably a non-stick pot. Also add in Milk before putting it on a low heat for about 25-30 minutes.

    Occasionally keep stirring at regular intervals. At the end of the duration, see to it that there is no raw smell left and that it looks cooked. Now add Sugar along with Ghee and Fresh Cream too.

    Also add Saffron, slivered Almonds, Cashewnuts and Cardamom powder. Mix well and cook on a high heat by stirring it occasionally until the Sugar dissolves and makes this Halwa shiny and glossy along with a lovely aroma emanating in your Kitchen. Ghee starts leaving the sides of the kadai and it's almost complete. Top it up with some crumbled Khoya or Mawa.

    Serve it warm or cold with a dollop of Vanilla Ice-cream or as desired.
