Simmered Pork Belly - Surprisingly Easy

One day my husband said, "I really feel like eating simmered pork belly..."
I found out that, although it takes time, it's really not that hard.
It's now a family favorite!!
You can make a drop lid with aluminum foil. (A donut-shape with a hole in the middle works well.)

Cut the white part of the scallion diagonally (Save the green part, since you'll use it later!)

Cut the pork belly in 3 cm pieces, and coat with katakuriko.

Put vegetable oil in a pan, add the pork, and brown on both sides. (About 5 minutes over low-medium heat.)

Put the pork and the green part of the scallion in a pot, and add enough water to cover the pork. Cover with a lid and boil for 1 hour over low heat.

Put the ingredients marked ◎ in a separate pot, and bring to a boil. Add the white part of the scallion and the pre-boiled pork. Cover with a drop lid/otoshibuta made of aluminum foil or parchment paper, and a lid. Simmer over low heat for 1 hour.

After 30 minutes, add the boiled eggs, and turn over the pieces of pork.

Check the seasoning occasionally while cooking, and adjust to your taste.

When the meat and eggs have turned brown and the sauce has reduced, it's done!

If you make it ahead of time and let it cool, the flavor is absorbed well. Reheat before serving.
