Milk Sandwich Cookies with Cream Filling

I make snacks just about every day, so I'm always looking for recipes for snacks that are delicious and easy to make with few ingredients.
These cookies would also be delicious with other kinds of cream fillings or jam. Just increase the amount of cake flour to 80 g and don't remove the tablespoon of filling in Step 2.
These are sweetened only with condensed milk, so the cookies are not too sweet. Recipe by caramel-cookie

Cooking Instructions

Bring the butter and condensed milk to room temperature. Combine the ◎ dry ingredients and sift.

Cream the butter, add condensed milk and mix well. Remove and set aside 1 tablespoon of the mixture (→ for the cream filling)

Add the dry ingredients all at once and fold in with a spatula.

Roll the dough into a 3-3.5 cm cylinder. Wrap with plastic wrap and chill in the refrigerator to rest for at least 30 minutes.

Preheat the oven to 340F/170C. Slice the dough to 5 mm thick and lay on a baking tray lined with parchment paper.

Bake for about 12-13 minutes at 340F/170C.

When they're done baking, cool the cookies on a rack.

When cool, stack the cookies in pairs. Spread the cream filling between the cookies and lightly press.
