I came up with this as a tasty way to enjoy leftover enoki from when I made a hot pot. Mushrooms and butter go together very well, so I used this combination.

Simple Enoki Mushroom Soup

I came up with this as a tasty way to enjoy leftover enoki from when I made a hot pot. Mushrooms and butter go together very well, so I used this combination.

Ingredients

2 servings
  1. 50 gramsEnoki mushrooms
  2. 1Soup stock cube
  3. 400 mlWater
  4. 1/2 tspSoy sauce
  5. 1 tspButter
  6. 1 dashGreen onion (thinly sliced)
  7. 1Coarsely ground black pepper

Cooking Instructions

  1. 1

    Slice the stems off the mushrooms, and slice into 3 cm lengths.

    Heat the 400 ml of water and soup stock in a saucepan. Stir with a ladle, and add the mushrooms when the soup stock has dissolved.

    Once boiled, remove from the heat and mix in the soy sauce and butter.

  4. 4

    Pour it into bowls, sprinkle on some green onion, and season with black pepper to finish.
