10 Minute Carrot & Egg Stir-fry

I made this recipe often when I was living alone with no money or time. It doesn't look very appetizing, but the flavor of the fluffy egg and sweet carrot really comes out, making it very delicious.
You can adjust how much the egg cooks to suit your tastes. I like mine about halfway done. Recipe by mikarin4

Cut the carrot diagonally into strips.

Heat some vegetable oil and stir-fry the carrots. Once the carrots are coated with the oil, fill with water until they are just covered. Add the soy sauce and the sugar, and simmer.

Once the liquid has lessened, pour in the beaten egg. Once it has cooked, roughly stir it up and it's done.
