Mix gram flour along with all dry ingredients inluding green chillies in a big bowl. Add tamarind pulp to it. Make a paste of this by adding water little by little. No lumps should be formed. The consistency should be thick enough to spread.

From the backside of all the leaves, remove the central stem carefully.

Now arrange the leaves one below the other keeping smallest leaf at the base.

Now the largest leaf is at the top. Place it on the platform and apply the paste on whole lead using our hands. Now fold it from both the sides to make it even and rectangular in shape. Fold it from the bottom as well.

Now apply the paste on the folded part and place 2nd leaf on this first one. Apply the paste exactly in the same way on this leaf and fold it as we did previously.

In this way, keep arranging the leaves on one another after applying the paste and fold it as shown in the image. Use 7-8 leaves for one roll approximately.

Place it in a container having holes with water in the bottom vessel to steam this.

It will take 10 to 15 minutes to steam these rolls.

Now let them cool down and cut them into pieces of about 1 inch each.

For tempering heat oil and add mustard seeds to it. As they splutter, add sesame seeds and pour the mixture on the pieces of patra. Garnish with grated coconut and coriander leaves.
