I had a bag of enoki mushrooms on hand, so I added them to my usual breakfast tofu dish and created a new variation.

Cooking Instructions

Remove the stems of the enoki mushrooms and cut it into 3 even lengths.

Add the sauce ingredients and Step 1 enoki mushrooms into a pot and turn on the heat. Cut the silken tofu into your desired size and add to the pot.

Simmer for a while. Thicken with the katakuriko slurry and turn off the heat.

Serve in a bowl and garnish with green onions.
