I wanted to eat a filling miso soup, so I made it with the food I already had in stock.

The amount of miso is based on the size of my ladle, so adjust the amount to your taste.
Add shichimi spice if you prefer. Recipe by Chokotaro.

Ingredients

4 servings
  1. 1Sweet potato
  2. 10 smallTaro root
  3. 3Dried shitake mushrooms
  4. 1/2Carrot
  5. 1block, Konnyaku
  6. 1block, Tofu
  7. 2 cmDaikon radish
  8. 100 gramsPork (offcuts)
  9. 1/2ladle, Miso
  10. 1Shichimi spice (as needed)
  11. 2 1/2 cupWater (600 ml)
  12. 1packet Dashi stock (8 grams)

Cooking Instructions

  1. 1

    Cut sweet potato, carrot, konnyaku, daikon radish, tofu, and taro root into bite sized pieces. Rehydrate the dried shitake mushroooms and slice.

    Heat water and dashi stock in a pot. Add the vegetables and pork. Skim the scum off.

  3. 3

    When vegetables have cooked through, dissolve in the miso.
