Ingredients

20-25 minutes
3-4 servings
  1. 2 cupsthick Poha (rice flakes)
  2. 1/2cup/1 medium potato, peeled and diced finely
  3. 1/2 tspmustard seeds/rai dana
  4. 1/2 tspcumin seeds
  5. 2whole red chillies
  6. 1/4 cuppeanuts, roasted in oil
  7. 1green chilli, julienned/finely chopped
  8. 1/3 tspred chilli powder
  9. 11/2 tsp lemon juice
  10. 1 tbspsugar
  11. 2 tbspoil
  12. to tasteSalt
  13. as requiredJulienned/finely chopped fresh coriander leaves for garnishing
  14. as neededBoiled vegetables of your choice

Steps

20-25 minutes
  1. 1

    Clean and wash the poha/rice flakes in a sieve with enough water. Drain the excess water and keep aside.

  2. 2

    In a pan, preferably non-stick and deep, heat the oil and roast the peanuts on a medium flame till they change colour. Remove in a bowl and keep aside.

  3. 3

    Now add the mustard seeds. When they start crackling, add cumin seeds and whole red chillies. Simultaneously, add the diced potatoes.

  4. 4

    Add salt and stir. Cover the lid of the pan and the flame on sim. Cook for 4-5 minutes. Stir frequently.

  5. 5

    Now add the rice flakes, red chilli powder, sugar, lemon juice, green chilli and salt as per taste. Mix well and cover the lid again.

  6. 6

    Cook on a sim flame for 3-4 minutes. Stir it again. And let the lid be covered for at least 2 minutes.

  7. 7

    Add the vegetables, desired toppings and julienned fresh coriander leaves. Mix. And serve hot with your desired drink.
