Clean and wash the poha/rice flakes in a sieve with enough water. Drain the excess water and keep aside.

In a pan, preferably non-stick and deep, heat the oil and roast the peanuts on a medium flame till they change colour. Remove in a bowl and keep aside.

Now add the mustard seeds. When they start crackling, add cumin seeds and whole red chillies. Simultaneously, add the diced potatoes.

Add salt and stir. Cover the lid of the pan and the flame on sim. Cook for 4-5 minutes. Stir frequently.

Now add the rice flakes, red chilli powder, sugar, lemon juice, green chilli and salt as per taste. Mix well and cover the lid again.

Cook on a sim flame for 3-4 minutes. Stir it again. And let the lid be covered for at least 2 minutes.

Add the vegetables, desired toppings and julienned fresh coriander leaves. Mix. And serve hot with your desired drink.
