Preheat the oven to 265°F (130°C).

Roughly chop the almonds and hazelnuts.

In a large bowl, mix the rolled oats, almonds, and hazelnuts.

In a small bowl, melt the coconut oil in the microwave for 20 seconds (only if necessary). Then add the vanilla extract, maple syrup, and honey, and mix everything together.

Add this liquid mixture to the bowl containing the oats, almonds, and hazelnuts. Mix everything well. The color of the oats should change, and the liquid should be fully absorbed.

Spread everything on a baking sheet lined with parchment paper. It should be about 1/2 inch thick and packed tightly so it holds together well.

Bake for 25 to 30 minutes. Check regularly to ensure it doesn't burn (granola is "sensitive" and can burn very quickly).
