Bhindi/Okra Fry with roasted Cumin Powder

Okra or Bhindi is available in the mandi. It's such a vegetable, loved by most people. I like Bhindi, onion and tomato fry and tempered with roasted cumin powder. My family even likes, this preparation mostly.

Okra or Bhindi is available in the mandi. It's such a vegetable, loved by most people. I like Bhindi, onion and tomato fry and tempered with roasted cumin powder. My family even likes, this preparation mostly.
Cooking Instructions

Clean, wash and the dry bhindi. Chop as you like. I chopped in 1 inch apart.

In a nonstick pot heat 2 tsp oil. Add the chopped bhindi. Add salt, turmeric, mix well and fry on high heat for 3 minutes.

Remove the half friend bhindi to a container. Again heat the nonstick pot, heat rest of the oil.

Add ponch phutan and let them crackle. Add chopped onion and a pinch of salt. Fry till translucent.

Then add chopped tomatoes, mix well and saute till tomatoes are soft and bhindi well fried.

Bring down cooked bhindi and add and mix well the roasted cumin powder(homemade). The delicious bhindi masala is ready to serve.

Note to self: I absolutely love okra, it’s one of my favorite vegetables right after beets. There’s just something about cooking okra that reminds me of childhood. I remember my mom using leftover okra and making grilled stuffed sandwiches with them. Now this recipe is one of my mom’s and I’ve been sworn into secrecy about the spices used. (My family owns a Pakistani restaurant, Lazeez Asian Cuisine, and disclosing the spices aren’t an option as of yet). But I’ve found a way around it with the permission of my momma so you guys can enjoy the authentic taste of Pakistani cuisine! I’m in the process of trying to brand and sell individual spice mixes for these Pakistani dishes (in collaboration with Lazeez Asian Cuisine) and later on to other recipes as well.
