Today I will show you how to cook Vegetarian Moti Pulao. Pearl Pulao or as it is popularly known as Moti Pulao is a delicacy from Awadhi Cuisine of 18th Century. The original version of the pulao is non-vegetarian. This rich Pulao was cooked in the kitchens of Nawab of Lucknow. Pearls or the Moti in pulao are made with egg whites poached and cooked with special technique, pounded and stuff in the intestine of chicken and in such a way that the cooked yolks resembled the real pearls.

For vegetarians, this is an easy and quite simple vegetarian version of the pulao, where the Pearls or Moti in Pulao are made with the Paneer or Indian Cottage Cheese.

Ingredients

  1. 2 cupsRice
  2. 3 teaspoonsGhee (Clarified Butter)
  3. 3/4 teaspoon of crushed Jaiphal (Nutmeg)
  4. 2 tablespoonsRefined Oil and additional quantity as per requirement for fry
  5. 50 gmsCashew Nut
  6. 1Cinnamon stick
  7. 6Cloves
  8. 2Green Cardamoms
  9. 1 teaspoonPeppercorn
  10. 3/4 teaspoon of Salt
  11. 1/2 teaspoonSugar
  12. 3 cupsMilk
  13. 3/4th cup of Water
  14. 1 teaspoonSaffron
  15. 100 gmshomemade Cheese
  16. 1/2 teaspoonGaram Masala
  17. 2 tablespoonsMaida (Flour)

Steps

    First, prepare Pulao. Take 2 cups of Rice in a bowl.

  2. 2

    Wash the Rice multiple times with Water till it is clean.

  3. 3

    After Rice is cleaned, add Water in Rice and keep for 15 minutes.

  4. 4

    After 15 minutes, strain out the Water.

  5. 5

    Add 1 teaspoon of Ghee (Clarified Butter) in the Rice.

  6. 6

    Add 1/2 teaspoon of crushed Jaiphal (Nutmeg) in the Rice.

  7. 7

    Mix well.

  8. 8

    Cover the Rice and keep for 15 minutes.

  9. 9

    Next, fry the Cashew Nuts. Add 2 tablespoons of Refined Oil in Kadai.

  10. 10

    Add 50 gms Cashew Nut in the Oil and fry.

  11. 11

    Now, prepare the Pulao. Add 2 teaspoons of Ghee in Cooker.

  12. 12

    Add 1 Cinnamon stick, 6 Cloves, 2 Green Cardamoms in the Ghee.

    Add 1 teaspoon of Peppercorn.

    Fry till nice smell comes out.

  15. 15

    Add the Rice in the cooker.

  16. 16

    Mix the Rice properly with spices and fry little.

  17. 17

    Add 1/2 teaspoon of Salt.

  18. 18

    Add 1/2 teaspoon of Sugar and continue stirring for 2 minutes.

    Add 3 cups of Milk in the Rice.

  20. 20

    Add 3/4 th cup of Water.

    Add 1 teaspoon of Saffron and mix.

    Add the fried Cashew Nuts.

    Lock the pressure cooker lid and cook till 1 whistle in full flame.

    After 1 whistle, switch off the gas.

    Open the cooker after pressure is released. Keep the Pulao in cooker for 10 minutes.

    Next, prepare Cheese balls using 100 gms of homemade Cheese.

    Add 1/4th teaspoon of Salt in Cheese.

    Add 1/2 teaspoon of Garam Masala.

    Add 1/4th teaspoon of Crushed Jaiphal (Nutmeg).

    Mix well.

    Add 2 tablespoons of Maida (Flour) in Cheese and make dough.

    Prepare Cheese balls from the dough.

    Next, fry the Cheese balls. Add Refined Oil in Kadai.

    Fry the Cheese balls till golden brown.

    Add the fried Cheese balls in the Pulao and mix.

    Moti Pulao is ready for serving.
