Ingredients

5-6 servings
  1. 1/2 lbbacon, sliced
  2. 2 lbpotatoes, diced
  3. 1/2medium yellow onion, finely chopped (Optional)
  4. 48 ozchicken stock
  5. 2 cupsheavy cream
  6. 4 ozpackage of mashed potato flakes (any flavor/brand)
  7. 4 Tbspminced fresh thyme, rosemary mix. (Optional)
  8. Salt and pepper to taste

Cooking Instructions

    In a pot start to crisp your bacon, halfway through add the onions

  2. 2

    Once the bacon is crisped and the onions sautéed, add your potatoes.

    Add your chicken stock, herbs and bring to a boil

  4. 4

    Add potato flakes and simmer until soup thickens. (This will be almost immediately) **I used roasted garlic flavored**

  5. 5

    Add your cream and simmer for another 5 mins.

  6. 6

    Garnish with cheese, scallions, croutons..whatever you want and enjoy!
