Fried eggs + sage (the perfect pairing!)

The simplest of breakfasts but I couldn't not share this. Simply because fresh sage and eggs are such a delicious pairing.
Use fresh sage or if you have a big plant of sage, you can infuse the leaves in olive oil. Sage oil is amazing on eggs!
These eggs are from my dad's free range hens and as the days get longer they lay more so there's always a surplus. These chickens are truly free range with 2 fields to roam around in the welsh countryside!

Find eggs. The fresher the better!

Heat 3 tbsp oil over a medium-high heat and allow the pan to heat up.

Crack the eggs into the hot pan (this helps them get nice and crisp underneath) and pick the sage leaves into the oil. Season with salt and pepper

Lower the heat slightly, cover the pan and cook until the yolks are done to your liking.

Serve on buttered toast.
