This is one of the traditional Portuguese home cooked dishes. The recipe normally calls for black-eyed peas; but since they are hard to get, I made it with chickpeas (garbanzo beans).

Ingredients

2 servings
  • 2 canChickpeas (dry-pack, canned)
  • 1/4Onions (finely chopped)
  • 1Boiled egg (finely chopped)
  • 1sprig Parsley (finely chopped)
  • 3 tbspOlive oil
  • 1 tbspVinegar
  • 1Salt and pepper

Steps

  1. 1

    In a bowl, mix the chickpeas, onion, parsley, olive oil and vinegar. Season the mixture with salt and pepper.

  2. 2

    Transfer the mixture from Step 1 onto a plate, and top it with a finely chopped boiled egg.
