I just love salsa.

You're going to add wine so be careful not to overcook the vegetables beforehand or they will wither.
I added boiled chicken made with another Cookpad user's recipe. Since it was already cooked, I could still make this dish quickly. The chicken was so soft and delicious (I sprinkled it with salt before stir-frying.) Recipe by kbitch.

Ingredients

1 serving
  1. 2 tbspStore-bought salsa
  2. 1 tbspRed wine
  3. 1 dashSalt and pepper
  4. 1/4 tspCoriander
  5. 1/2 tspPaprika
  6. 2 tspGarlic oil (or olive oil)
  7. 1 dashChili pepper (if you like)
  8. 4 sliceSliced jalapeño peppers
  9. 1Cheese (I used red cheddar) or sour cream + salt & pepper
  10. 1Lemon juice (as desired)
  11. 1Vegetables (whatever you have lying around)
  12. 1 smallEggplant
  13. 1/2Onion
  14. 1/2Tomato (pour boiling water on to take off skin if you'd like)
  15. 1i used boiled chicken this time. Optional ingredients (meat, etc.)
  16. 1/4Red bell pepper

Cooking Instructions

    Cut the eggplant, tomato, and red bell pepper into bite-size pieces. Finely chop the onion and jalapeño peppers.

  2. 2

    Add the oil to a frying pan, followed by the eggplant, onion, red bell pepper, and tomato, then stir-fry. Once everything is coated in oil, add in the jalapeño peppers and continue to stir-fry.

    Add in the salsa and quickly mix in. Once that's in, quickly add the wine. The heat should be high to burn off the alcohol in the wine so keep stirring everything quickly and adjust the taste with coriander, salt and pepper.

    Add everything to a plate and serve sprinkled with cheese, lemon juice and chili pepper.
