Remove the skin from the wood pigeon and carefully take out all the small bones.

Chop the wood pigeon meat into small pieces and set aside, keeping the wings whole.

Turn the heat back on under the sautéed vegetables, add the sausage, and once browned, add the chopped wood pigeon.

Deglaze with the red wine and let it evaporate completely.

Add the tomato paste, then the broth, and simmer on low heat for about 1 1/2 hours.

Cook the tagliatelle noodles and toss them with the sauce, adding a little pasta cooking water if needed.
